St. Malachi Cheese
St. Malachi took home second-place Best in Show at the 2016 ACS, and then once again won the blue ribbon in its category the next year. What makes this cheese so remarkable? Its deeply satisfying flavors of brown butter, pineapple, and coconut certainly have a lot to do with it. American cheesemaking at its best. It’s made on a farm that practices sustainable, organic farming and rotational grazing, meaning the cheese starts as the finest milk imaginable. The wheels are then aged in stoned caves right on site, turning St. Malachi into something indubitably divine.
