Foraged Wild Ramps - Allium Tricoccum
Ramps are a wild leek native to Pennsylvania. The smell of ramps is synonymous with Spring and they are a favorite of our restaurant clients and our staff. The broad, fragrant leaves are great for pestos and the bulbs are fantastic pickled; they can also be substituted for onion/garlic in a recipe. Ramps are a signature foraged wild edible from Wild Purveyors and are featured in our logo.
Ramps (which are sometimes called wild leeks or spring onions) look like a cross between a scallion and a leek. They're smaller than a leek and more delicate with a bulb like a scallion and they have two or three flat, broad leaves. They taste stronger than a leek, which generally has a mild onion flavor, and are more pungently garlicky than a scallion. Truly a treasure of spring.
