If you're a "use the whole animal" advocate, if you're missing Dim Sum, or if you want a classic jellied soup stock, consider these good quality chicken feet. The outer hard skin is mostly removed, but they can still use a parboiling (a pre-boil, with the water discarded). They are then good either slowly braised, fricasséd, long-simmered, slow-cooked or pressure cooked.
